Homemade Chatpati Healthy Namkeen

Ingredients:
Oats: 1 cup (roasted)
Makhana (Fox Nuts): 1 cup (roasted)
Peanuts: 1/2 cup (roasted)
Chickpeas (Boiled and dried): 1/2 cup
Curry Leaves: A handful (optional)
Mustard Seeds: 1 tsp
Turmeric Powder: 1/2 tsp
Chaat Masala: 1 tsp
Red Chili Powder: 1/2 tsp (adjust to taste)
Salt: To taste
Amchur (Dry Mango Powder): 1 tsp
Jaggery Powder: 1 tbsp (for a slight sweetness)
Olive Oil: 1 tbsp
Lemon Juice: 1 tbsp (for tangy flavor)
Sesame Seeds: 1 tbsp (optional)
Steps:
1.Roast the Oats & Makhana: In a pan, dry roast oats and makhana separately on low heat until they are crispy. Set aside.
2.Prepare the Seasoning: In the same pan, heat olive oil and add mustard seeds. Once they start to splutter, add curry leaves, turmeric powder, red chili powder, and sesame seeds. Stir well.
3.Mix the Ingredients: Add the roasted oats, makhana, peanuts, and chickpeas to the pan. Toss them well to coat with the seasoning.
4.Add Flavors: Sprinkle chaat masala, amchur, salt, and jaggery powder over the mixture. Stir everything together until well combined.
5.Finish with Lemon: Turn off the heat and squeeze fresh lemon juice over the namkeen for that tangy punch.
6.Cool & Store: Let the namkeen cool completely before storing it in an airtight container.
