Paneer Kathi Roll

INGREDIENTS
• 1 whole wheat roti
• 3-4 small lettuce leaves
• 40 gms paneer
• 1 tsp hung curd/ sour cream/ yogurt
• 1 tsp sunflower seeds
• 1 tsp garlic-ginger paste
• Salt to taste
• 1 carrot
• 1 small red onion
• ½ capsicum
• 1 small handful spinach
• 2 tsp green chutney
• Lemon zest
• Salt and pepper to taste
STEPS
1. Dry roast the sunflower seeds in a pan.
2. Grate the carrot, dice the bell peppers, slice the onion into rings and roughly chop the spinach and capsicum.
3. Take another bowl for dressing, add grated ginger and garlic, cottage cheese, hung curd/ sour cream, lemon zest and green chutney and mix it well.
4. Take the roti and spread and lettuce leaves and the dressing mixture onto the roti evenly.
5. Put all the vegetables on it.
6. Now sprinkle the salt, sunflower seeds and pepper. Wrap the veggies so that none falls out.
7. Place the wrap on tawa and cook it till it turns slightly brown.
8. Serve hot!
