Veggies Stuffed Grilled Zucchini

INGREDIENTS
Zucchini– slice the zucchini vertically, scoop the flesh and keep it aside.
For the stuffing:
• ½ cup bell peppers chopped (mixed)
• ¼ cup tomato puree
• ¼ cup sweet corns
• ¼ cup grated carrot
• 50 gms grated paneer
• 1 tsp olive oil
STEPS
1. Sauté all the veggies in the pan with olive oil for 2 minutes. Add scooped zucchini flesh in it. Add tomato puree and cook for another 1 minute.
2. Add oregano, chilli flakes, salt, pepper, ginger-garlic paster as per taste.
3. Stuff the zucchini with the filling and grate some paneer and sprinkle coriander leaves on top.
4. Bake in oven for 30 seconds to 1 minute. Serve while adding oregano seasonings on top.
